Fattoush Salad

Serves 4
Ingredients
1 Spring onion, finely chopped
30g Turkish bread croutons
1 Tomato cut into 8 pieces
½ Cucumber, peeled and cut into chunks
25g Shaved red onion
2 tbsp Fresh parsley leaves
2 tbsp Fresh mint, torn pieces
2 tbsp Fresh coriander leaves
45ml Red wine vinaigrette
Pinch Salt
Pinch Pepper
Pinch Sumac
Method
To assemble soak the croutons in red wine vinaigrette, until just starting to absorb.
In another bowl mix all the ingredients except for the sumac, dress with red wine vinaigrette and season with salt and pepper.
Mix in the croutons and serve.
Finish with a generous sprinkle of sumac.
